Cocoa butter, which is primarily used in chocolate and confectionery production, is not sufficient to meet global demand. Here, palm oil plays a role in bridging the gap as it is used to manufacture cocoa butter alternatives, also enhancing the properties of the final product to be better for consumers. There are 3 alternatives to cocoa butter made from palm oil, each with specific properties based on the needs of each manufacturer: 1- CBS, which stands for Cocoa Butter Substitute; this can be used as a complete substitute for cocoa butter without mixing. 2- CBR, which stands for Cocoa Butter Replacer; this is also a substitute but can be mixed with cocoa butter. 3- CBE, which stands for Cocoa Butter Equivalent.
